Mostly Healthy Apple Sauce Muffins

I've been experimenting in the kitchen lately, and I've come up with a fantastic muffin recipe that I just had to share with all of you. These Mostly Healthy Muffins are not only delicious, but also filled with wholesome ingredients, making them a guilt-free treat for all of us to enjoy.

Mostly Healthy Apple Sauce Muffins

Ingredients

  • 50g of Butter
  • 65g of coconut sugar or honey
  • 1 egg
  • 600g of Apple Sauce
  • 4g of baking Soda
  • 4g of baking powder
  • 2g of vanilla
  • 180g of whole wheat flour (or oat flour)
  • 30g of vanilla casin powder (not whey)
  • 1g of cloves
  • 1g of all spice
  • 3g of cinnamon
  • 1g of nutmeg
  • 3g of salt
  • (Optional) 1 Whole apple, chopped
  1. Preheat over at 425F
  2. Cream together butter, sugar, and egg in a stand mixer
  3. Add apple sauce, baking soda, baking powder, and vinalla. Mix in slowly until well combined.
  4. In a separate bowl add, flour, casin powder, cloves, cinnamon, nutmeg, vanilla, and salt and whisk until combined.
  5. While setting your stand mixer to medium low, add in the dry and wet to combine. Do not over mix.
  6. Fold in chopped apples
  7. Place in a 12 muffin tin. This will use all the batter
  8. Bake for 21 – 25 minutes or until internal temp reaches 205F degrees


A Few Notes

  • If you do add fresh apples, it could increase the baking time.
  • Coconut Sugar will add a much darker color to the muffins. I highly recommend you use a thermometer to tell if bake time is completed.
